Diving into a pool of champagne may sound enticing, but only stepping through the doors at FIZZ recreates that effect while keeping your clothes dry. With help from his civil partner—the one and only Sir Elton John—creative director David Furnish fashioned FIZZ into a buzz-worthy lounge inside Caesars Palace. Furnish and John outfitted the two-story space with avant-garde photography from their own collection, baking those pieces into a cognac-, ivory-, and copper-tinted scheme evoking a premium bottle of bubbly.

To supplement all those style points, FIZZ delivers an equally impressive food and drink menu, which fittingly includes fine champagnes and creative, original cocktails. The kitchen, meanwhile, assembles artful plates of sushi, bite-size paninis, and gourmet cheese plates. But the item on the food menu that best reflects the ambiance is probably the meticulously selected Siberian Ossetra caviar, served on ice with buckwheat blinis and crème fraiche.
